In the R&D science lab we determine the identity, quality and authenticity of the product. We aim to describe and determine the degradation course of the product, as well as its expiration date, through special experimental tests known as “accelerated tests” and accelerate its “stability1” under normal conditions. At the same time, the products are separated into perishable and non-perishable categories, determining the time of their consumption.<\/p>\n
Also, in addition to the statistical analysis and the predictive application of regression equations for product shelf life, we place a high priority on ensuring its quality through continuous organoleptic, physicochemical, and microbiological analyzes for product safety.<\/p>\n
By the term stability is meant the ability of a product to comply with specific specifications that determine its identity, quality and authenticity. Its objective is the description and determination of the degradation process of the product over time and the estimation of the expiration date. It follows that the lifetime of a material is generally defined by the time during which the material is expected to remain within the limits of specific specifications after its manufacture. A generally acceptable shelf life is considered that which allows the maintenance of the desired organoleptic, chemical, physical and microbiological characteristics, which are defined as end of life parameters (EOSL – End of self life parameters). Each food is distinguished by its own properties and therefore by specific limits of their variation. The usual procedure for determining shelf life involves studying “selected conditions” for a period longer than the expected shelf life and checking at regular intervals to detect or initiate spoilage in the food (by “selected conditions” we usually mean some sensitive phases of manufacturing process, type of packaging and method of storage\/preservation.]<\/p>\n
